Makes enough for 10 servings

Ingredients for the Clementine Cordial (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

For the Cocktail (produces 850ml, serving 10)

400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Instructions

Making the Citrus Syrup: Combine the listed components inside a saucepan, bring to a simmer, mixing until the sugar dissolves. Then, turn off the stove and let it to cool fully. Transfer into an sealable bottle, close it and refrigerate it in the fridge, where it will keep for around a month.

To make Cocktail Base: Pour all the liquid ingredients into a sizeable container, leave to sit for an hour, then filter it best through a fine cloth, so it's completely strained.

When ready to serve: Add 85ml from the cocktail base into a cocktail shaker packed with ice, gently stirring lightly for about 60 seconds until cold. Filter to a cold coupe glass or equivalent, decorate with the cranberries and complete it with a light spray with the mandarin essence over the drink.
